Pizza with Garlic and Arugula
Ingredients:
- 1/4 Cup (60 g) butter
- 2 Small white onions, sliced
- 2 Cloves garlic, thinly sliced
- 1/4 Cup (60 ml) brandy
- 1/4 Cup (60 ml) heavy (double) cream
- Salt and freshly ground black pepper
- Freshly squeezed juice of 1/2 lemon
- 3 Ounces (90 g) Fontina or other mild firm cheese, thinly sliced
- 3 Ounces (90 g) mozzarella cheese, thinly sliced or shredded
- 6 – 8 Walnuts, halved
Preparation:
- Preheat oven to 450 F
- Stretch doughball as per instructions on bag
- Melt butter in a large frying pan over medium heat
- Add the onions and garlic, saute until softened, 3 – 4 minutes
- Add the brandy and saute until evaporated, 2 – 3 minutes
- Stir in cream and simmer for 2 minutes
- Season with salt and pepper and remove from heat
- Thinly slice the apples and brush with the lemon juice
- Spread the onion mixture over the dough, leaving 1/2 inch (1 cm) border all around
- Top with Fontina, mozzarella, and apples
- Season with salt, pepper, and walnuts
- Bake for 10 – 15 minutes, until the crust is crisp and golden brown, and cheeses are bubbling and beginning to brown
